On more before I go to bed. My mother-in-law, a very sweet lady, passed away the day after we moved in our home over 4 years ago. One meal she was able to pass down to me before she got sick was her Chicken and Dumplings. It was one my husband insisted I learn to make. I sure do wish I had more time with her before her passing. I hear she made some wonderful meals. I am glad I got to eat some of them, but only on holidays.
1 whole fryer or 4 chicken breasts
Chicken broth (4 cups water + 4 bouillon cubes) or make/use your own
1 can flaky biscuits (generic is OK)
Boil chicken in chicken broth until done. Remove chicken from broth and cool; debone if needed. (you can use leftover chicken- I use the leftover Crockpot Chicken alot). While you wait for chicken to cool and debone, pull the layers apart on the biscuits. The more you pull apart, the more dumplings you will have. Place them in the broth to boil for 20 minutes. Add salt and pepper to your liking now. Place chicken back in with dumplings and heat until hot all the way through again.
This is one recipe that will be passed down to another generation when I teach our daughter to make it.
